Pantry Clean-Out: Garlicky Sausage, Broccoli & Egg Skillet

For the nights when the cupboard is nearly bare, this is four things and one pan — sausage, broccoli, eggs, garlic. The sausage browns, the broccoli steams in a splash of water right beside it, then the eggs crack straight into little wells and set in the skillet.

No sides required and no grocery run: scoop it out with toast if you have it, or eat it just as it is. Cook the yolks as runny or as firm as your table likes.

    Heat olive oil in a large 12-inch skillet over medium-high heat.

    Add the sliced sausage in a single layer and cook without stirring for about 3 minutes until the undersides are golden brown, then flip and cook another 2 minutes. Push sausage to the edges of the skillet.

    Add the broccoli florets to the center of the skillet with 2 tablespoons of water. Stir everything together, cover with a lid, and let the broccoli steam for 3 to 4 minutes until it is bright green and just tender.

    Remove the lid, add the minced garlic, and stir for about 30 seconds until the garlic is fragrant.

    Season everything with salt, black pepper, and red pepper flakes if using, then create 6 small wells in the mixture by pressing a spoon down to the surface of the pan.

    Crack one egg into each well. Season the eggs lightly with a pinch of salt and pepper.

    Cover the skillet again and reduce heat to medium-low. Cook for 3 to 4 minutes until the egg whites are set but the yolks are still slightly runny, or longer if your family prefers fully set yolks.
